Morning pick-up in Florence, heading north to Parma. On the way, stop for a visit and tasting at an esteemed producer of balsamico in the town of Modena. You've never experienced balsamic vinegar quite like this before. After the stop, continue to your accommodations in Parma. Settle in, explore and enjoy a dinner featuring regional specialties such as mixed salumi and taglioni al culatello (little spaghetti with strips of ham served in a decadent parmigiano sauce).

Get ready for your mouth to water. All day long. The day's culinary adventure begins with a visit to a local producer of world-renowned parmigiano reggiano. For a producer to receive this distinct and important designation, the cheese must be made in the surrounding area of Parma, and you will get to see and savor it all first-hand. Following your fill of parmigiano, hopefully you’ll have remembered to save some room for the next stop: a local producer of prosciutto di Parma. After a short tour, you will enjoy a lunch featuring heaping plates of local meats (salumi) and pasta paired with Lambrusco, the typical wine of the region. On our way back to the hotel, we'll stop at a charming medieval castle and town, where you can stretch your legs while enjoying panoramic views over the Emilia Romagna countryside.

After getting situated in your seaside hotel (in a port town such as Santa Margherita, Portovenere or Camogli), explore on your own and dine in the open air with your pick of fresh local seafood.
