Afternoon pick-up from central train station in Umbria (Perugia or Terni). After checking in and settling into your accommodations, head out to your first brewery visit and tour in Assisi. Here you’ll learn all about how the brews are handcrafted with only the best ingredients and enjoy a tasting on-site. Afterwards, head to a typical Umbrian restaurant where you’ll enjoy a handcrafted menu of regional specialties with select beer pairings. The feast will include hand-made pasta, appetizers, and roasted meat for a traditional Italian barbeque.

Spend the morning on your own, exploring within the town of Assisi. In the afternoon, head to Spello to explore its beautiful narrow streets for a few hours with a private guide. Spend lunch on your own dining in one of the several small, authentic restaurants in Spello (don’t’ worry – we’ll give you recommendations!) In the afternoon, visit an organic brewery that’s already making headlines despite its small size and young owners. Known for its production of beer using flowers and local ingredients, this brewery has received international recognition including at the Milan Expo. After the tour and tasting, enjoy dinner matching special beers to a dedicated menu.

This morning visit the medieval city of Spoleto, famous for its fortress, tower bridge and Duomo set against a backdrop of Umbrian forest. Afterwards, head to a pecorino farm for a private tour with a local shepherd. (If in season the day may also include an olive mill experience or truffle hunt.) In the afternoon have a light lunch on your own before visiting the Marmore Falls (the tallest mad-made waterfall in Europe.) That evening, visit a brewery which produces English style beer and enjoy an explanation of the product and its history by a nutritionist and historian of Perugia University. The discussion will include the importance of the ingredients and various techniques that date back to myriad populations from Egyptians to Germans. After the tour enjoy dinner at a local taverna with beer and food pairings.

Afterwards, head to Norcia, a strategic former Roman colony and culinary epicenter known for truffles, cheeses, wild boar and other local delicacies. Depending on the season, either venture out on a truffle hunt or visit an authentic pork butcher to learn how the specialized tradition of curing pork began in the Middle Ages. (These “nursini” - butchers from Norcia – were so precise that this technique was also used in surgery on people.) Afterwards, enjoy a special visit to the Saint Benedict church and convent. Here you’ll meet with the Benedictin Monks who produce a very special beer using age-old secret recipes dating back centuries. This evening’s dinner will be based on truffle and lentils which pair excellently with this special, Monk-produced beer.
